A flavorful vegetarian dish, that’s packed with flavor using JuJu Royal Extra Virgin Olive Oil. Great as a main dish or serve with your preferred protein. Bringing the flavors of Fall!
Ingredients
- 2 1/4 tsp JuJu Royal EVOO
- 1/4 cup raw unsalted cashews, broken in half
- 1 tsp curry powder
- 1/4 tsp cinnamon
- 1 bay leaf
- 3/4 cup white onion, chopped
- 1 tsp ginger, grated
- 1/2 cup basmati rice
- 1 1/2 cup water
- 1/4 cup dried cranberries
- 1/4 cup dried apricots, diced
- 2 tbsp fresh cilantro
Instructions
In a medium pan, pour olive oil over medium heat. Add cashews and toast for 8 minutes or until browned, stirring occasionally.
Add curry powder, cinnamon, bay leaf and cook for 45 seconds, coating cashews.
Remove cashews and set aside.
In the same pan, cook onions and ginger over medium heat for 3 minutes. Add rice, stirring to coat.
Add water, cranberries, and apricots, stir to cover.
Reduce heat to low, cover with lid and simmer 20 minutes until rice is tender.
Remove from heat and let stand for 5 minutes.
Remove lid carefully and fluff rice with a fork. Remove bay leaf, add cashews, and top with cilantro.
