For the love of Green! Try out this light and easy, Ginger Honey Shrimp Salad recipe, a salad that you can eat all year long. Uncomplicated homemade salad dressing that’s packed with flavor by using JuJu Royal Extra Virgin Olive Oil and Ginger Honey.
Sautéed Shrimp
Ingredients
- 1 lb, raw shrimp, peeled and deveined
- 2 tbsp JuJu Royal Garlic Olive Oil
- 2 tbsp minced garlic
- 1 tbsp lemon juice
- 1/4 tsp Himalayan sea salt
Instructions
In a large skillet, add olive oil over medium/high heat.
Add garlic and cook for 1 minute.
Add shrimp, lemon juice and sprinkle salt on top of shrimp.
Cook shrimp for 3 minutes, turn over and cook for an additional 3-4 minutes or until the shrimp turn a pale pink color.
Remove from heat and pour the shrimp into a large bowl to further sauté.
Let shrimp cool down to room temperature.
Ginger Honey Lime Dressing
Ingredients
- 1 lime, juiced and zested
- 2 tbsp JuJu Royal Ginger Honey
- 2 tbsp ground mustard
- 1/2 cup JuJu Royal Extra Virgin Olive Oil
- 1 tsp Himalayan sea salt
- 1/2 tsp garlic powder
- 1/2 tsp ground pepper
Instructions
In a blender, add all ingredients except for the olive oil and blend together until well mixed.
While blender is running, slowly add olive oil through the small hole of the lid and continue blending until well-mixed.
Salad
Ingredients
- 1 bag of mixed spring green salad
- 1 bag of micro greens
- 1 handful of edible flowers
- 1/2 cup cherry tomatoes, halved
- 2 roma tomatoes, halved
- 2 avocados, sliced
- 1/2 cup blueberries
Instructions
In a large bowl, add all ingredients and toss until well combined.
Add sautéed shrimp and drizzle with ginger honey lime salad dressing.
Eat immediately!
To change it up, grill shrimp with kebab skewers for about 2 minutes per side.
