- 2 organic zucchini, sliced
- salt and pepper, to taste
- 1 cup flour
- 3 organic brown eggs
- 1/4 cup parmesan cheese, grated
- 1 cup panko crumbs
- 1 tbsp Italian seasoning
- JuJu Royal Jerk EVOO for frying
Season zucchini slices with salt and pepper.
In three separate small bowls, add flour in bowl one.
Whisk eggs in bowl two.
In bowl three combine parmesan cheese, panko crumbs and Italian seasoning.
Dip zucchini slices into the following order – flour, eggs, then panko mix.
Pour 1/2-inch of olive oil in a medium saucepan, and heat to medium-high.
Fry zucchini for five minutes or until golden brown.
Serve with your favorite sauce, marinara or ranch.
