Family style dish, loaded with delicious vegetables and protein with JuJu Royal Extra Virgin Olive Oil. A great way to get your veggies.


  • 2 tbsp JuJu Royal Garlic Extra Virgin Olive Oil
  • 3 cups potatoes, shredded
  • 2 bell peppers, cored and chopped
  • 1 medium onion, chopped
  • 1 cup spinach, chopped
  • 1 cup grape tomatoes, sliced
  • salt and pepper, to taste
  • 7 brown eggs
  • 2 scallions, sliced
  • 1 tbsp cilantro, chopped


Preheat oven to 350.

In a 12-inch iron skillet, heat oil over medium-high heat.

Add potatoes and cooked for 5 minutes. Scrape the bottom of the pan to keep from sticking.

Reduce heat to medium and add peppers and onion. Cook for additional 5 minutes.

Remove from heat and stir in spinach, tomatoes, salt and pepper.

Within vegetable mixture, make 7 holes. Add a cracked egg within each hole and sprinkle with a little more salt and pepper.

Place skillet in oven and bake for 20 minutes until yolks harden.

Top with scallions and cilantro and serve immediately with toasted grill bread.
