Ingredients
- 2 tbsp JuJu Royal Garlic EVOO
- 1/2 cup shallots, chopped
- 1 garlic clove, minced
- 5 small purple potatoes, quartered
- 1 sweet potato, quartered
- 6 rainbow carrot mix, skinned
- 1 cup cherry tomatoes, sliced
- 1 tsp chopped fresh rosemary and sage
- 1/2 tsp pepper flakes
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 lemon, juiced
Instructions
In a medium pan, heat olive oil over medium-high heat.
Add shallots, garlic and cook for 2 minutes.
Add potatoes and cook for 8 minutes, stirring occasionally until potatoes are tender.
Add tomatoes, all seasonings and lemon juice. Cook for additional 4 minutes.
Remove from heat and serve.
