  • 2 tbsp JuJu Royal Garlic EVOO
  • 1/2 cup shallots, chopped
  • 1 garlic clove, minced
  • 5 small purple potatoes, quartered
  • 1 sweet potato, quartered
  • 6 rainbow carrot mix, skinned
  • 1 cup cherry tomatoes, sliced
  • 1 tsp chopped fresh rosemary and sage
  • 1/2 tsp pepper flakes
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 lemon, juiced


In a medium pan, heat olive oil over medium-high heat.

Add shallots, garlic and cook for 2 minutes.

Add potatoes and cook for 8 minutes, stirring occasionally until potatoes are tender.

Add tomatoes, all seasonings and lemon juice. Cook for additional 4 minutes.

Remove from heat and serve.
