- 4 potatoes
- 1 yellow onion
- 2 brown eggs
- 6 tbsp flour
- 2 tsp salt
- 1/4 tsp pepper
- 1/2 tsp garlic powder
- 1/4 cup JuJu Royal Garlic Extra Virgin Olive Oil
With a food processer shred potatoes and onions.
Place potato mixture into a mixing bowl and cover with cold water.
Rinse and drain with a strainer.
Drape cheesecloth over empty mixing bowl and spoon mixture on top of cloth and twist tightly squeezing until liquid is strained out.
Place mixture into a bowl and add eggs, flour, salt, pepper and garlic and combine.
Heat oil in a cast-iron pan over medium heat.
Drop spoonful of batter into the pan and flatten slightly.
Cook 5 minutes until edges turn brown. Flip and cook until golden brown.
Transfer to a paper towel lined plate to soak up oil.
Serve latkes warm and top with sour cream or applesauce.
