Red Bean Paste
- 1 1/2 cups azuki beans
- 4 cups water
- 1/4 cup JuJu Royal Ginger Honey
Wash azuki beans with cold water and drain.
Place beans into a pressure cooker, add water and seal lid.
Cook 25 minutes, allowing pressure to release.
Drain immediately and place cooked beans into a mixing bowl.
Add honey and stir until well blended. Let mixture sit and cool for 15 minutes, beans will slightly thicken.
Transfer mixture into a food processor and blend until smooth.
Pour mixture into a container and place in fridge to firm.
Red Bean Spring Roll
- 1 cup red bean paste
- 8 spring roll wrappers
- JuJu Royal EVOO for frying
Place 2 tbsp. of paste in the center of the spring roll wrapper.
Lightly brush wrapper edges with water. Fold edges into the center, pressing lightly to seal and roll into a tight roll.
Place several inches of oil in pot over medium-high heat. Deep fry until golden brown.
Remove and place on paper towel to soak up excess oil.
Serve hot, either plain, with a drizzle of honey, or with a scoop of ice cream.
