The ideal rich and moist cupcake. Zucchini chocolate cupcakes made with JuJu Royal Ginger Honey and Extra Virgin Olive Oil. A perfect balance of sweetness and rich chocolate.



  • 2 cups zucchini, shredded
  • 3 eggs
  • 1 cup JuJu Royal Ginger Honey
  • 3/4 cup JuJu Royal EVOO
  • 2 tsp Madagascar vanilla
  • 2 cups all-purpose flour
  • 2/3 cup unsweetened cocoa powder
  • 2 tsp baking soda
  • 1 tsp kosher salt
  • 1/2 tsp baking powder


Preheat oven to 300 F.

Line muffin cups with cupcake liners.

In large bowl, mix zucchini, eggs, honey, olive oil and vanilla.

Add flour, cocoa powder, baking soda, salt and baking powder and mix well.

Spoon batter into cupcake liners, half full.

Bake 25 minutes or until toothpick insert comes out clean.

Cool cupcakes on a cooking rack.

Chocolate Cream Cheese Frosting


  • 8 oz cream cheese, room temperature
  • 1/4 cup and 2 tbsp JuJu Royal EVOO
  • 3 cups powdered sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/4 tsp kosher salt
  • 1 tsp Madagascar vanilla


In large bowl, beat cream cheese and olive oil until creamy.

Add powdered sugar, cocoa, salt and vanilla and continue beating until smooth and whipped.

Frost cupcakes when cupcakes are cool.

Top with chocolate shavings or sprinkles.
